Dates are single-stone fruits that grow on the date palm. People have been farming them around the Persian Gulf for roughly 5,000 years.
Iran grows dozens of varieties, most of them in the palm groves of the south, southwest and southeast. Several of those varieties are traded worldwide.
Dates ripen in big clusters on the tree, and they change while they hang there. Early on they are light green, crisp and sharp to taste. By harvest they have turned dark, chewy and sweet. Some varieties stay small and dry; others end up almost black.
